Gluten Free Easy Cranberry Walnut Pie

Easy Cranberry Walnut Pie

Ingredients
Cranberry Filling:
  • 1/2 cup sugar
  • 1 tablespoon cornstarch
  • 2 tablespoons maple syrup
  • 1/2 cup water water
  • 2 cups fresh or frozen cranberries
  • 1/2 cup raspberries, tightly packed, fresh or previously frozen
  • 1 tablespoon butter
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1 teaspoon almond extract
  • 1 cup chopped walnuts
Oatmeal Crust/Topping
  • 3/4 cup all purpose flour or gluten free flour blend
  • 1/2 teaspoon salt
  • 3/4 cup sugar
  • 3/4 cup butter, softened
  • 1 cup uncooked oatmeal
To make cranberry filling:  Mix together sugar and cornstarch (to avoid lumps).  Add all ingredients except walnuts and extract to a heavy bottom sauce pan.  Cook until cranberries have popped and mixture starts to thicken.  Remove from heat and stir in walnuts and almond extract. Set aside and allow to cool while prepping the crust.

To make oatmeal dough:  Sift together flour, salt and sugar; cut in butter with a pastry blender or fork until mixture resembles coarse meal. Add oatmeal and mix thoroughly. Pat 2/3rds of the dough in an ungreased 9 inch pie pan, patting evenly up the sides and on the bottom to create the crust.  Spread cranberry filling over crust.  Sprinkle top with remaining dough for a streusel effect.
Bake at 350°F until lightly browned (approximately 45-50 minutes).
Cool and slice.  Serve with vanilla ice cream, if desired.  Makes 8 servings.

Thanksgiving 2014

Thanksgiving 2014
Time to Give Thanks for the wonder in your life. . .
Is it your reality to Give Thanks only one day a year?
Traditionally it's a day that family and close friends, loved ones gather together to share a meal and we are grateful to have these people in our lives and eat the traditional Turkey/Ham dinner, both in some households.
But is that the only day of the year that you sit back to relax & dwell on the things that you are grateful for? I actually know some people like that.
I am grateful and live in gratitude every single day of my life. It is part of my daily ritual per say, to reflect on my day and to be grateful for every encounter I had that day. Some days there are only a few things I could actually say thank you for the ____ in my life but even the difficult things should be acknowledged as there is a silver lining in every dark cloud. Dark clouds help us to realize on a daily basis how much wonder there is to be seen through our eyes, the windows to our souls. Everyday is yet another day to learn and grow and we should always be grateful cause it could have always been worse. When I lay down at night and count my blessings I always acknowledge everything and everyone, good, bad or indifferent and know that even in the slightest way that it made a difference in my life.
I like to slam Monsanto on my Facebook page. But in turn I am thankful that I can slam them and that even if one person read one of the posts that maybe I got through to just one person, I have accomplished a good deed for the day. To contribute to and spread the word on the poisons being feed to the people of America, if I can change one persons mind about eating organic and taking care of their families as we were intended to live, free from chemicals, then I did a good thing. I am blessed for the opportunity to be allowed to speak my beliefs and concerns for others and for that I am grateful.
We are all blessed and could use a little more gratitude in our lives so share it this holiday season, let the people you love know that you are grateful for their presence in your life and enjoy this wonderful day Thanksgiving.
