Gluten Free Diet

Gluten Free Diet, is something that has been a challenge for me since I have such a huge love for breads and pasta's. I was raised in an Italian household. My father and brother were both chef's and my mom was just a really dammed good cook. We always had fresh baked breads, cannoli, kaiser rolls and such and dinner always included a plate of pasta. Growing up was a love story of food as we had the best meals in the neighborhood.
About 5 years ago I became very ill every time I ate anything that wasn't just fruit or vegetables and then sometimes I still had such a stomach ache I couldn't even breath.(more Chenicals) Even beer made me sick. Since then I learned that it was all the chemicals that make me sick which still keeps me away from any wheat, barley, rye or hops as those products like corn and sugar are harvested in the same practice, that which they actually spray herbicides on the plant to kill the mother plant before the harvest, causing the plant to yield more grains as the plant pushes everything out before it dies off. These foods are not washed to remove the residues of the chemicals and are dried and processed leaving the residue in tact. My body is no longer capable of processing these chemicals and it has destroyed my digestive system which is commonly refereed to as celiac disease.
In order to have a sandwich I have been subject to the gluten free offers that crumble in your hands unless it is toasted, that they sell at the grocery stores for 3 times the amount of money, as they sell regular bread for and we are accustomed to buying. Gluten free loaves are a third of the size  for this little loaf in stores. Imagine buying a loaf of bread 1/3rd of the size and your paying $6.50 for this little loaf
So I started to learn to bake, I thought, this has to work for me cause I need peanut butter sandwiches or bust. It ends up that I have become really good at this and even though I learned that the bread will last a week before it molds, that the biggest trick is Don't Store it in Plastic! Plastic makes the bread turn into the stuff you buy at the grocery store.(plastic is toxic and not my favorite medium for storage anyway). I use all organic ingredients in my breads,granola, actually everything I make
So I am considering a new business of baking and selling a line of Gluten free bread packaged in paper bags, granola, which is something else I have learned to make really well, mini loaves of sweet breads and cookies.
I plan to sell at the local flea market here in Princeton this summer and if it goes well I will offer them in my Etsy shop, as they do allow sales of food items. I'm excited about learning about all the legal aspects of making and selling food and the certifications and licensing I need to obtain to bake and sell gluten free, organic breads and sweets. Maybe I will be able to turn this not so nice situation into a passion for fresh baked gluten free foods and share my love for bread with others who share in my dilemma over not being able to eat regular bread.
